Evergreen Creamery’s goal is to create the best cheese from the best milk. The best milk comes from the happiest cows in the world (Surprise! They’re actually in Washington). These cows live in a picturesque valley at the base of a snow-capped volcano whose glaciers keep a year-round supply of cold fresh water to the resident cows. With a world that continually focuses on shelf life and sugars, we are committed to producing the highest quality artisan cheeses. That means no shortcuts, no cutting corners, just really good cheese.

Lucas King's commitment to perfection and creating amazing cheese stems from his deep belief that delicious cheese is created by using the best ingredients, and you'd be hard-pressed to find better ingredients than those in the Trout Lake Valley. With its deep history as a dairy cow paradise, farmers in this valley have long-realized that the rich volcanic soil, and the pure glacier water allow plants to grow in the best conditions, which in turn produces the happiest cows, and the best milk.

After learning the tricks of the trade for several years working at other creameries, he set out on his own with one simple belief: I can do better. And so he is, creating unique, bold, and classic cheeses that reflect his creativity and dedication to using local and natural ingredients.
